What is the best thing about the Island’s food culture?
For us at The Crab & Lobster, it has to be the seafood. As a local ingredient it is very important to us. We are very close to the sea but it is still hard to get hold of as there is such a huge demand.

Your favourite place for a special night out?
I do enjoy going to the Character Inns other pubs, especially The Sun, Hulverstone for its stunning views. However, if I want to completely get away from work and for a special occasion, you can’t beat Burrs in Newport. I know the chef there and a lot of local produce is used in their dishes.

What is your favourite local ingredient?
At the moment, it is the seafood we are getting in daily. However, during the winter months, I enjoy working with the game on the Island. There are 140 shoots here so there is always something to work with.

What is your favourite local tipple? 
Me and my wife are quite new to gin and are really enjoying it, particularly the local Mermaid Gin..

What is the one dish on your menu you keep coming back to?
For me, a good steak is always a favourite. A nice piece of rump served with peppercorn sauce, a dressed salad and some triple cooked chips.
