As the evenings are getting darker, and The Great British Bake Off has come to an end (we’re sad too), everyone definitely needs some cake to get them ready for the winter months. And if you can’t be bothered, don’t stress, with this recipe it will barely feel like you’ve spent any time in the kitchen at all.
If you don’t fancy making the cake batter from scratch either, you can cut out a few steps by using a premade lemon cake mix (no judgment here) - we recommend the Betty Crocker Lemon Cake Mix and 1x 330 ml can of lemonade. However, if you fancy making your cake from scratch...
1tspbicarbonate of soda
Pre-heat oven to 180°C (350°F).
Blend all the cake batter ingredients together.
Once smooth, pour the mix into a greased baking tin and pop into the oven for 40 minutes (or until fully cooked all the way through).
While that is baking away in the oven, mix the icing ingredients together.
Drizzle the icing over once the cake has cooled down.
